Cedar Planked BBQ

The secret to grilling bratwurst - Cedar Planks

Often, sausages, hot dogs, bratwurst, and weisswurst are mishandled on the grill. They end up overcooked to the point of being dry and charred, or they are cooked too fast, causing them to split and lose their flavorful juices.

The secret to perfectly grilling bratwurst, which can easily catch fire, is to be patient and cook them slowly at a low temperature until their internal temperature reaches 170ºF, typically taking about 25 minutes.

Grilling bratwurst on a plank not only gives them a pleasant smoky wood flavor but also helps prevent flare-ups, as the soaked plank acts as a shield between the meat and the flames.

Indirect Heat Method: this method, the fire is on one side or on opposite sides of the grill, with the food placed over the unlit area. Using indirect heat to grill sausages is the tastiest approach, as it prevents the skins from burning.

Ingredients:

  • 1 cedar plank (soaked in water for at least 1 hour, longer is better)
  • 6 bratwursts
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Fresh parsley, chopped (for garnish)
  • Buns, for serving (optional)

Instructions:

  1. Soak the Cedar Plank: Soak the cedar plank in water for at least 1 hour, longer is better.
  2. Preheat the Grill: Preheat your grill to medium heat.
  3. Prepare the Cedar Plank: Place the soaked cedar plank on the grill, close the lid, and heat for about 7 minutes.
  4. Grill the Bratwursts: Place the bratwursts on the heated cedar plank. Close the grill lid and cook for about 25-30 minutes, or until the bratwursts are cooked through (internal temperature of 170ºF).
  5. Make the Sauce: While the bratwursts are grilling, mix together the Dijon mustard and apple cider vinegar in a small bowl.
  6. Serve: Remove the cedar plank from the grill. Serve the bratwursts with the mustard sauce on the side. Garnish with fresh parsley. If desired, serve the bratwursts in buns.

Tree of Life Story

Western Red Cedar: "Life Giver" for Many Coastal Native Americans

The Western Red Cedar is often referred to as “the cornerstone of northwest coastal Native American culture.” Known as the “Tree of Life” and “Life Giver,” some tribes called themselves “People of the Cedar.” Groves of ancient cedars were symbols of power and gathering places for ceremonies, retreats, and contemplation.

All parts of the tree were utilized, providing:

Shelter: Lodges, lash-house timbers, planks, posts, and roof boards

Tools and Utensils: Grilling planks, baskets, ropes, fishing nets, bowls, and boxes

Clothing: Skirts, capes, and dresses

Medicinal Remedies: Poultices and teas

From the past through today, Western Red Cedar remains a vital part of our culture and heritage, offering symbols from long ago and products we use and admire every day. In the Pacific Northwest, this beautiful, sturdy, and versatile tree continues to grace us with its many gifts.
